If you are on Mounjaro or another GLP-1 and you keep skipping breakfast because nothing appeals, this is the plate that changed my mornings. Smoked salmon and softly scrambled eggs on toasted rye lands around 29g of protein for roughly 450 calories, it takes ten minutes, and it works with a reduced appetite rather than against it. Protein in the morning is the single habit that protected my muscle across seven stone of loss, and this is one of the easiest ways I found to actually get it in.

Why this breakfast works so well on a GLP-1
On a GLP-1 your appetite is suppressed, which is the whole point, but it means every meal has to earn its place. A slice of toast on its own does nothing for you. This plate is built around three things that matter when you are eating less:
1. Protein you can actually finish. Two eggs plus smoked salmon is about 29g of protein in a small, soft, easy-to-eat portion. When you feel full after a few bites, dense protein like this beats a big bowl of cereal you will not get through.
2. Omega-3 and healthy fats. Smoked salmon brings omega-3 alongside the protein. Fat also slows digestion slightly, which helps that satisfied feeling last into the morning instead of a mid-morning dip.
3. Fibre from the rye. Rye bread adds a bit of fibre and a slower release than white toast, which is worth having when constipation is such a common GLP-1 complaint.
Why I reach for this over cereal or toast
A bowl of cereal or a couple of rounds of toast used to be my default, and it was doing me no favours. It was mostly carbs, barely any protein, and I was hungry again within the hour — which, before Mounjaro, meant snacking. This plate flips that. The protein and fat keep me settled for hours, so it steadies the whole morning rather than kicking off an early hunger cycle. What you need (serves 1)
- 2 medium eggs
- 50g smoked salmon (about 2 slices)
- 1 slice of rye bread
- 1 tsp butter (or olive oil)
- Pinch of pink Himalayan salt
- Black pepper, to taste
- Fresh chives, chopped
- A handful of rocket leaves
- A squeeze of lemon juice
A decent non-stick frying pan is the only kit that really matters here — soft scrambled eggs are far easier when nothing sticks.
How to make it
- Toast the slice of rye until golden. Get this going first so everything comes together at once.
- Crack the eggs into a bowl and whisk them lightly — just enough to combine, no need to go mad.
- Melt the butter in your non-stick pan over a low to medium heat. Low and slow is the secret to creamy eggs; high heat gives you rubber.
- Pour in the eggs and stir gently with a wooden spoon or spatula, folding rather than beating, until they are softly scrambled.
- Take the pan off the heat while the eggs still look slightly underdone and creamy — they carry on cooking in the residual heat.
- Layer the smoked salmon over the toasted rye.
- Spoon the scrambled eggs on top of the salmon.
- Finish with chopped chives, a few rocket leaves, a squeeze of lemon, and season with salt and pepper. Serve straight away.
My tweaks to push the protein higher
The standard version is already good, but here is how I adapt it on a training day or when I want it to carry me further:
Add a third egg or a splash of egg white. An extra egg takes you comfortably past 35g of protein without making the plate feel heavy.
Stir in a spoon of cottage cheese or quark. Folded through the eggs at the end, it adds protein and makes them even creamier.
Swap butter for olive oil. A small change that nudges the fat profile toward the good stuff if you are watching that.
Bulk it with greens. A bigger handful of rocket, or some spinach wilted into the eggs, adds volume and micronutrients for almost no calories.

Prep and storage
Scrambled eggs are best fresh, so this is not one to batch-cook in bulk. What you can do is prep the extras: keep sliced smoked salmon portioned, chives washed and chopped, and rye in the freezer to toast from frozen. That turns a ten-minute breakfast into a five-minute one on a work morning. Some days on a GLP-1 the thought of food does nothing, and that is normal. Do not force a full plate — even half of this, or just the eggs, is better than nothing when your protein matters.
