Feta, Avocado & Pine Nut Wrap: A Mediterranean Veggie GLP-1 Lunch

Not every portable lunch has to be built on meat. This feta, avocado and pine nut wrap is a Mediterranean-inspired veggie option that is creamy, salty, nutty and genuinely satisfying, at around 400 calories. It is my go-to portable lunch on a meat-free day, and the feta and avocado together make it feel far more indulgent than a healthy wrap has any right to.

Feta brings protein and big flavour. Salty, tangy feta means you get a protein hit and so much flavour that the wrap feels indulgent without needing much cheese.

What you need (serves 1)

  • 1 wholemeal tortilla wrap
  • 40g feta, crumbled
  • ½ avocado, sliced or mashed
  • 1 tbsp pine nuts, lightly toasted
  • A handful of rocket or spinach
  • 4 cherry tomatoes, halved
  • Squeeze of lemon
  • Black pepper
  • Optional: a few fresh mint or basil leaves

How to make it

  1. Lightly toast the pine nuts in a dry pan for a minute or two until golden — watch them, they catch fast.
  2. Lay the wrap flat and spread or lay the avocado down the middle, seasoning with lemon and pepper.
  3. Add the rocket or spinach along the centre.
  4. Scatter over the crumbled feta, tomatoes and toasted pine nuts.
  5. Add a few mint or basil leaves if using, for a fresh Mediterranean lift.
  6. Fold in the sides and roll up tightly.
  7. Cut in half and serve, or wrap in foil for later.

Boosting the protein

At 14g this is a moderate-protein lunch, so on a hungrier day:

Add chickpeas or a spoon of hummus. Either brings plant protein and fibre while keeping the Mediterranean feel.

Add a boiled egg. Sliced through the wrap, it lifts the protein nicely.
