  • 100ml chicken stock
  • 1 tsp olive oil
  • Fresh parsley, chopped
  • Salt and black pepper

How to make it

  1. Heat the olive oil in a large pan and cook the sliced chicken until golden and cooked through, then set aside.
  2. In the same pan, cook the onion and mushrooms until softened and the mushrooms have released their liquid.
  3. Add the garlic and paprika and cook for a minute.
  4. Pour in the chicken stock and Dijon mustard, and let it bubble for a couple of minutes.
  5. Return the chicken to the pan and warm through.
  6. Take the pan off the heat and stir in the Greek yoghurt — off the heat stops it splitting.
  7. Season, scatter with parsley, and serve over rice or cauliflower rice.

Go lower carb. Serve over cauliflower rice or a pile of green veg instead of rice to cut the carbs right down.

Add more mushrooms or spinach. Either bulks it out with fibre and volume for almost no calories.
